At the helm of La Lonchería is Gloria, a vital member of the team whose roots trace back to Atlixco, Puebla. Her dedication, organizational prowess, and willingness to tackle challenges head-on make her indispensable to the operation. Alongside her partner, Ernesto, they form the backbone of Loncheria’s kitchen, ensuring that every dish served embodies the Mexican culinary tradition.

One of the highlights of La Lonchería's menu is the cemita, served in house-baked cemita bread—a dish that pays homage to its roots in Puebla. Paired perfectly with Pichumel agave mezcal, sourced from San Luis Atolotitlán, Puebla, and crafted by maestro mezcalero José “El Guero” Ortega, it's a match made in culinary heaven.
